弗氏檸檬酸桿菌革蘭陰性桿菌，有周鞭毛，能運(yùn)動(dòng)，無芽胞，無莢膜。具有氨芐青霉素（Ampr）、卡那霉素（Kanr）、四環(huán)素（Tcr）及鏈霉素（Strr）抗性。光滑、低凸、溫潤、半透明或不透明，表面有光澤，邊緣不整齊。菌體桿狀，直徑1.0，長2—6μm。菌落直徑2—4mm。出芽繁殖為主，酒類增香。用于白酒增香?？梢院?0ppm MG的無機(jī)鹽培養(yǎng)基中正常生長，最適生長溫度為30℃。
